Red Sebino IGT. Maurizio Zanella 2003 - Ca 'Del Bosco
45% Cabernet Sauvignon, Cabernet Franc 15% Merlot 40%. From 10 vineyards. The Maurizio Zanella is obtained separately vinified the grapes of Cabernet Sauvignon, Merlot and Cabernet Franc of the best vineyards of Ca 'del Bosco. The grapes, after a manual sorting, are transferred over the tanks, de-stemmed, crushed and introduced them by gravity. The fermentation lasted 12 days from the 2003, carefully managing the temperature so that it rose gradually from 21 oC to 31 oC initial final. After fermentation the temperature was maintained around 28/30oC throughout the period of post-fermentation maceration. The entire winemaking process lasted 24 days for Merlot, Cabernet Franc for 23 days and 24 days for Cabernet Sauvignon. After racking the wine, still hot, were transferred in small wooden barrels, 60% new, in underground cellars. Only after the end of malolactic fermentation (January 2004) was done to assemble batches, giving rise to Maurizio Zanella 2003 final. After a period of 13 months of aging in wood, the wine was bottled with innovative filling systems, in the complete absence of oxygen, without shaking to preserve the best integrity.
